Claude Crispin was a 19th‑century baker in Chudleigh Knighton, Devon. In 1857 he wrote a letter to Gerald Sheep‑Shanks describing the handmade pies he made in his small bakery. His recipe, featuring potatoes, swede, onion, and beef wrapped in short‑crust pastry, is the ancestor of the Crispin family’s traditional Devon pie.
