Karl De Smedt is the creator of Puratos' Sourdough Library, a not‑for‑profit initiative that preserves bread heritage. He opened the world’s only Sourdough Library in the Puratos Center for Bread Flavor in Belgium in 2013, where the collection grew from 43 to over 130 sourdoughs.
